Looking for a quick meal that is under 10 minutes to prep and absolutely delicious? Try tjis yummie chicken and corn pie. it serves 6-8 portions. To make it you will need:
2 cups of cooked and shredded chicken
1 can of corn kernels
1 can of cream of corn
1 cup of flour (you can use wheat flour or corn flour for some extra flavour)
1/4 cup of almond milk
4 bacon slices, fully cooked and chopped
1/4 cup of chives, chopped
1 teaspoon of stevia (or sugar)
3 tablespoons of butter, melted
1/2 cup cheddar cheese
1 tablespoon of kosher salt,
1/2 teaspoon of pepper
I know… This pie has A LOT of ingredients.. but all you need to do is to combine them… I first tried this recipe during Christmas.. I had a little dinner for a few of my girlfriends and I wanted to make a few dishes that I could prepare in advance so I would not have to stress when my guests arrived… This was a total hit! and I must say, it is perfect to take for work and to freeze for another night! Ok.. back to the recipe…
Pre-heat the oven to 375 degrees. Open the corn kernel can and drain the liquid. I actually always wash the kernels a bit to get ride of that “can” flavour. Mix the kernels with the cream of corn and then add all of the remaining ingredients (except the cheese).
Make sure you grease the pan before you pour the ingredients. I topped the ingredients off with 1/2 cup of cheddar cheese. You can mix it in but I liked it better on top!
I left it in the oven for 30-35 minutes. Wait at least 10 minutes before you cut and serve it. If you try to cut it while it is super hot, you will not get perfect squares!
I topped mine off with a bit of parsley… So simple and delish!
