This is another recipe I learned from a good friend who loves to bake.. (Thanks Bea).. I made some changes to make it a bit healthier but this is a super easy cake for a party or simply to make for breakfast on the go or to accompany a beautiful cup of tea! It is super moist and not super sweet! This recipe makes one cake or 2 cake loafs. To make this recipe you will need:
3 cups of carrots, shredded
2 cups of flour
1/4 cup of stevia
1 cup of brown sugar
1 teaspoon of cinnamon
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of vanilla
1/2 cup of coconut oil, melted (or you can use 1 cup of canola oil)
1/4 cup of almond milk
1/2 cup of pecans (or your favourite nuts, shredded)
You can enjoy the loaf without a frosting for breakfast or with tea. If you want to make a frosting for it you will need..
1 cup of cream cheese
1/2 cup of non salted butter
2 cups of icing sugar
My friend Beatriz made this cake for a dinner party I had the other day. After I tried it, I told her she needed to show me how to make this delicious masterpiece! I was surprised at how easy this cake was to make.. It is seriously an amazing recipe to try.. Now back to making this cake!
Pre-heat the oven to 350 degrees. The first step (and most annoying) is to shred your carrots..
To the carrots, add the eggs and vanilla and combine. Set aside.
In a separate bowl, combine sifted flour, baking power, baking soda and cinnamon
To the flour add the sugar, oil, milk, and finally, the carrot mix.
At this point you can add nuts if you like (I normally don’t because I cannot eat them but if you can, go for it!). I do recommend to shred them before so you do not get huge chunks of nuts when your enjoying the cake..
Now you can set your mixed into a greased pan. I have made both a cake and loafs out of this recipe.. In this occasion I made loafs.. It took about 1 hour to cook. If you set it in a cake pan, it will take 45-50 minutes (or until you can stick a knife and it comes out without any mix)
To make the frosting combine the cream cheese, butter and sugar in a standard mixer over slow speed first (to avoid a mess) and then high speed for about 5-7 minutes. Let the cake cool before topping it with the frosting. I added some nuts for decoration..
