I love the taste of pomegranates.. It gives texture and adds a sweet tone to any salty dish.. I love using them in salads, specially in the summer. This recipe makes two servings. To make it you will need:
1 small organic chicken breast, cooked and chopped
2 Lebanese cucumbers, chopped
1 cup of cherry tomatoes, halved
2-3 bunches of kale, rinsed and patted dry
1/4 cup of pomegranate seeds
10-12 pistachios, coarsely chopped
For the vinaigrette:
the juice of one lime
1 tablespoon of olive oil
1 tablespoon of pomegranate juice
salt and pepper to taste
I absolute love pomegranate seeds because they just taste so fresh and they always give that texture component croutons usually give in any salad.. I always use them in replacement of croutons to make salads gluten free.. To add an extra rich component I added pistachios to this salad and oh boy! was it delicious.. (if you want to really indulge, you can even add some blue cheese and fresh pear..) Back to the recipe!
In a mixing bowl, combine chopped kale, tomatoes and cucumbers. Set aside. In a small bowl, combine the lime juice, olive oil, pomegranate juice and salt and pepper and mix well to make the marinate. Add the vinaigrette to the mixed veggies and chicken and combine well. Transfer the salad to a serving bowl, top the salad with cooked chicken and sprinkle pomegranate seeds and pistachios.
