I swear this recipe tastes so fresh and delicious… It is super easy to prepare, perfect for a quick family meal or to make ahead.. You have to try it! This recipe makes enough for 4 servings. To make it you will need:
4 organic chicken breast
1 teaspoon of oregano
1/2 teaspoon of paprika
1/2 teaspoon of onion powder
salt and pepper to taste
1/2 teaspoon of coconut oil
2 garlic cloves, finely chopped
1/4 cup of balsamic vinegar
1/4 cup of basil, finely chopped
2 cups of cherry tomatoes, halved
4 slices of mozzarella cheese
When it comes to family dinners, I am always looking for tasty and easy recipes that I can whip up in no time.. This recipe definitely delivered… I first started by marinating the chicken with oregano, paprika, onion powder, salt and pepper. I also chopped my tomatoes and basil
In a saucepan, I heated the coconut oil and cooked the chicken for 5 minutes on each side over high medium heat.
Remove the chicken and set aside. In the same saucepan, add garlic and balsamic vinegar and cook for 1 minute over medium heat.
Add the cherry tomatoes and cook for 2 more minutes.
Now add in the chicken and almost all the basil (leave some to decorate the plate afterwards). Add a lid and cook for another 3-5 minutes or until the chicken is fully cooked.
Add the cheese slices and close for another minute to allow the cheese to melt and voila!
I served this wonderful meal with a side of my Ultimate Mashed Potatoes… Soooooo delicious! I promise the cherry tomatoes will taste like absolute heaven! The best part? No guilty feelings afterwards! Healthy and delicious!
